Albondigas Soup


1 lb. ground beef

1/4 cup long-grain rice

1 egg

1 tablespoon choppe fresh cilantro

1 teaspoon seasoned salt

1/4 cup ice water

2 cans (14.5 oz. each) chicken broth

1 can (14.5 oz) whole peeled tomatoes, undrained & cut up

1/4 cup chopped onion

1 stalk celery, diced

1 large carrot, diced

1 medium potato, diced

1/4 teaspoon garlic powder


In medium bowl, combine ground beef, rice, egg, cilantro, salt and ice water and form into small meatballs. In large saucepan, combine broth, vegetables and garlic powder. Bring to a boil; add meatballs. Reduce heat; cover and simmer 30 to 40 minutes, stirring occasionally.
