Eddie's Italian Sauce


Some call it spaghetti "gravy". Eddie calls it "sauce." Sugo in Italian means sauce. "A gravy recipe contains flour" says Eddie, born in Bari, Italy. Here is Eddie's Italian Sugo Recipe:






Eddie's Authentic (from Bari, Italy)
Italian Red Sauce

INGREDIENTS:

1 large can of imported Italian ( marked, “San Marzano”) Tomatoes (28 oz.)
(If you can’t find San Marzano tomatoes, Red Gold tomatoes will do)
1/2 cup of olive oil
1/2 (sweet onion, like Vidalia)
2 large cloves of garlic
1/2 tsp. oregano
Fresh basil or 2 tsp. dried basil
1 T. salt (to taste)
2 T. parsley (fresh, if you have it)


Put canned tomatoes in blender. Blend.
Put blended tomatoes through a sieve to get rid of seeds (they make sauce taste bitter).
Return sauce to blender.
Puree onion, garlic, olive oil, salt and spices together with tomatoes until well blended.
Put sauce in a pot and cook for about ½ hour. Sauce will not be very thick. It is the olive
oil that helps the sauce to stick to the pasta. Depending on the type of olive oil you are using,
you may have to add a tablespoon or so to the sauce.

Meanwhile, cook pasta. Don’t rinse pasta. Drain well. Put it in a large bowl and mix the sauce into the pasta. Put Parmesan grated cheese over the top and serve.
