Upside Down Enchiladas



Casserole Ingredients:



  1. One large bag of Doritos

  2. 2 Tablespoons of onion, grated

  3. 1 10 oz. can chili with beans

  4. 10-15 oz. enchillada sauce

  5. 8 oz. can tomato sauce

  6. 1.5 cups shredded sharp cheddar cheese

Topping:



  1. 2 cups Doritos

  2. 1/2 cup shredded cheddar

  3. 1 1/4 cups sour cream

Preheat oven to 375. Crumble six cups of Doritos with your hands into a large mixing bowl. Add the onion , the chili, the enchillada sauce, and the tomato sauce and 1.5 cups cheese to the crumbled chips. Stir with a rubber spatula to combine. Place mixture into an 8.5 x 11 oven proof casserole dish. Bake for 20 minutes. Remove from the oven. Spread the sour cream over the top with a large spoon or rubber spatula. Top with remaining 2 cups Dorito chips and then sprinkle one half cup of cheddar cheese. Bake an additional 5 minutes.


I did not top my casserole this way. I only spread the chips and cheese on top the last five minutes in the oven and served with a dollup of sour cream.
