Zucchini and Peppers, Italian Style

2 Zucchini, sliced or cut up if you like

2 peppers, red and green and/or yellow, chopped

Garlic, one clove or powder

1 teaspoon oregano

Olive oil


Squeeze of half a lemon

Handful of shredded mozzarella cheese

Saute zucchini and peppers in hot olive oil. Add lemon juice if you like. Add oregano and garlic. I had a few tablespoons left of Italian dressing that I also added. Just before I served, I shredded some mozzarella cheese over the mixture.
