Zucchini Meatloaf


1 lb. ground beef
½ cup seasoned bread crumbs
1 egg
¼ cup chopped celery
¼ cup chopped parsley
2 tablespoons Parmesan Cheese
1 8-oz can tomato sauce
1-1/2 cups shredded zucchini
Salt and pepper

Directions: Preheat oven to 350. Mix together the beef, bread crumbs, egg, celery, parsley, cheese, ½ of the tomato sauce, the zucchini, salt and pepper. Shape into a loaf, and place in a pan. Pour the remaining tomato sauce over meatloaf. Bake for about one hour.
