Morning Glory Muffins


2 cups flour
1 1/4 cup sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 cups grated carrots
1/2 cup raisins
1/2 cup shredded coconut
1/2 cup chopped pecans
3 eggs
1 cup oil
1 apple, cored & shredded
2 teasp. vanilla

In a bowl, combine flour, sugar, baking soda, cinnamon, salt. Stir in carrots, raisins, coconut & pecans. In a separate bowl, combine eggs, oil, apple & vanilla. Add to flour mixture. Stir. Spoon into greased muffin tins. Bake 350 for 15-18 min. Makes about 18 muffins.
