Zucchini Boats


When we brought zucchini for everyone in our Life Group, our friend, Steve, told the funny story of the town that had to keep their car doors locked to keep neighbors from sharing their zucchini crop with them. I like zucchini so I'm enjoying the season. My favorite way is to eat it raw in salads, but last night I made Zucchini Boats.


1/2 lb. ground beef

1 teaspoon olive oil

1/2 cup onion, diced

1 cup grape tomatoes

1 cup mushrooms, chopped

1/3 cup walnuts, chopped

1 teaspoon oregano

1 teaspoon thyme

Juice of one lemon

Six Zucchini (10" in diameter) halved lengthwise and seeded

1 cup Mozzarella Cheese


Preheat oven to 425.

In large skillet, brown the hamburger in olive oil and then add the onion. Place in a large bowl with vegetables, walnuts, herbs, lemon juice, salt and pepper.

Place zucchini halves in a long baking dish. Place mixture in the zucchini halves. Cover with foil and bake for 30 minutes. Uncover, and sprinkle with cheese. Bake ten minutes more or until cheese melts.
